My 2 1/2 year old lab has suddenly started chewing things that she shouldn't, eg. books etc.

She has half a ton of toys, has a lot of fuss made of her, isn't left alone in the house and is fed twice a day.

Is this normal lab behaviour? I've only had terriers before and so I would appreciate any help!

hate to say it but yes it is, try getting a kong thing and put food and/or treats in it to try and to make less bored. or has there been a change in the house recently (like a loss of a pet, a new pet etc.) that might make her behave how she is.
 
Could be attention seeking. It seems to me (with mine anyhow) the more attention you pay them, the more they demand it. Mine spend a few hours in the kennel after a walk and breakfast. It gives me space to do things without my "hangers on" and gives them a chance for the mud to fall off....
