Used to do it years ago with my little pony coz where we kept him hadn't got much grass (which was a blessing, in hindsight coz I think he would have got lammi in a rich field) so I'd take him out for a guzzle on the headcollar sometimes. It was quite interesting seeing what horses will eat from the hedgerows if left to their own devices!
With the one I've got now, I've taken him on a halti-hack to make him listen to me and be polite; also if hacking out quite often I tend to put on a halti underneath the bridle so if he does start to be a fruit-loop or spook or whatever, then I've got the means and method of sorting him out!
