Best fencing arrangement for weight control

In summer I keep my mare in a fenced off section of the main field to watch her waistline. Any other folks on here do this and what shape do you put your fencing in? I went to a laminitis clinic last night and they said that a U shape is best as it makes them walk further.
 
I make a track around the outside of a field and they live on that.If the water is in one place and licks ec scatered around hey have to keep moving.The centre is either kept for a cut of hay,grazing sheep/goats or fuggage for winter grazing.
 
I can't make a track around the whole field(as much as I would like to). It's a large field and the other liveries use it all summer. I do want to build my fenced off section to make my mare move around to eat though.
