Bit advice

So i have two boys having separate issues that i think are bit related

number 1 is a 15hh unknown breed, looks sort of new foresty - is in a cambridge snaffle for hacking and jumping in a school. for XC he is in a pelham because he is strong. Ive taken him to an amble with a hunt and hes too strong for the pelham. Im going to a hound exercise on the 4th september where i will try the pelham again but i dont think i will have brakes again. Whats the next step from a pelham. He doesnt like to be tugged at all the time and he hates joints so has always had mullen mouth bits. Hes in a running martingale and hes just started to open his mouth while i ask for him to slow down. I dont know if this is habit or if hes avoiding he hated the flash and im looking into getting a grackle for him to try.

number 2 is a 17.1 ex racer who came to me as a really skinny 16 year old. Had slight braking issues when i first brought him back into work but as soon as i put him in a NS loose ring snaffle he went perfectly but just recently he has started to get very excited and bolt when we are with other horses. Ive not really tried anything else with him other than snaffle but by the time ive got to the top of a canter hill (we dont canter every time) my arms are about to drop off because ive been fighting him. Recently the only way to stop him bombing off is to turn his head sideways while he is cantering so he doesnt lock on and go for it. Ive tried a flash which he hated. Didnt really like the 5 point. Hes in a running martingale but i dont feel it does much unlike my other boy, he was in a grackle but i took him out of it which i will be trying on him again. Hes 18 now and i want him to be taking things slower for his joints sake so i need a bit more control without feeling like ive been hit by a bus the next day. Im unsure whether to root of his problems is that he is in full work and has more muscle on him than ive seen on him before. Could it be that hes just fit happy and healthy and after 2 years im finally getting the real horse out of him?

Both are in plain cavasson bridles, none heating feed, physio checked, dentist booked. so bit advice is the next step in finding a happier way of riding the boys

I would start with some schooling for both horses as a stronger bit may not alter your problem but make it worse.
I do school them both. This is the problem. The more I work number 2 the worse he gets. I can ride both in a snaffle in an enclosed space but as number 2 is hacking out he’s like a bullet. Number 1 can be fine one day and the next a nightmare but he’s bareable when hacking it’s just the more exciting things like hunting where he’s strong
