Bit experts please?

As far as I know, the angle of the cheek piece ring is to allow more space for the lip when rein pressure is applied. I think they did research showing with dutch gags, horses with fat lips so to speak caught themselves with straight rings as rein pressure was applied as it pulled the cheek back. The poll pressure/leverage would probably be very similar but the mouthpiece of the NS, especially if it is the tranz angled lozenge, is more designed to roll down onto the tongue to apply slightly more pressure than a standard lozenge.
