having started inky in harness he has been bitted for the first time over the last couple of months. i have come to the conculsion he is better in a straight bar bit as oppose to a jointed one as he doesnt seem to "mess" with it as often and generally seems happier in it.

However occasionally he still keeps managing to get his tongue over the bit.

I have considered getting a mullen mouth bit with a roller in the middle but to be honest i dont really understand what the roller does??? Can anyone explain??

Ive also though about getting a medium port bit. Would this help with the tongue issue?? I have visions of it digging in the roof of his mouth and hurting.

a roller is good if they like to play with the bit, my TB likes a cherry roller on a straightbar mouth, it stops her chewing and they often come in copper or sweet iron varieties. Personally i would try this before a port.

However my fell pony also hates jointed bits so he has a low port, it gives some relief on the tounge with not touching the palate, his is very happy in it !
(but a higher port will touch the palate and are generally used short term for corrective purpose)
Though this may be dependant on your horse (different shape/size mouths) a few horses may have contact from a low port, easy enough to see - have a stare into his mouth !

have you tried one of these for the tounge over issue ?
