Bit help!!

Please can I get some advice re my horses bit. I tried to post it on Facebook but the bitless- people came for me haha.

My ISH mare has been in a Dutch gag - second ring- for most of the time that I’ve had her (3 years). (Some backround, I bought her unseen from a dealer in Ireland who turns out to have only had only had her 3 days before selling her and then blocked my on all socials so I have none of her history - but she was clearly a ‘mans horse’ and used to very heavy hands, which I’m the opposite of.)
She is a bolter but when she’s behaving she’s really quite chill. I think she likes her Dutch gag as I’ve never seen any signs of her not liking it, but she’s soft mouthed and I want a bit that is competition legal, lots of places around me don’t allow gags.

Any ideas of a bit that provides enough poll pressure to help me regain some sort of control while she’s bolting but not harsh on the mouth?

I tried her in a snaffle when I first bought her but having been bolted with 3 times for near enough a mile each time along a, thankfully quiet, road. I thought it’s likely safer to get a stronger bit, and I’ve used Dutch gags on many of my non- competition horses.

You can jump just fine in a Dutch gag. It’s only dressage that demands a snaffle. If she’s safe in an arena then I’d have two bridles and just use the snaffle in an enclosed space to be honest. I’ve done that plenty in the past!

I did think that, that’s what I’ve done this past season but I just wondered if I was missing out on some magical bit or something haha
