I have a new horse, 5 yo who is difficult in the contact and I am not sure what bit she might like. Currently in a snaffle. She has a big fleshy tongue and was getting her tongue over the bit, this has now stopped since I lifted the bit but she throws her head up and down and almost tries to drop the bit! Any ideas of what I can try to keep her comfortable?

You could try her in a comfy barrel.
I have to say though that in my (albeit not extensive) experience I've found that horse that are unhappy in the contact have a reason for being unhappy so just make sure you don't limit yourself to it being a bit problem if that makes sense 😊

Get a bit fitter but in the mean time borrow some to try. If she has a fleshy tongue you need a thinner bit but the rest depends on the shape of her mouth. And agree with @musk too

My youngster was like this
I tried various bits but having a bit fitter out was the most useful exercise and in fact the bit we settled on is the bit he is still in. He also would get his tongue over the bit.
I ended up with a Micklem bridle which I thinks helps by keeping the bit still and a Neue Schule Tranz Angle.
I also think he got better the stronger he got.
