Bits for newly broken mare

Bit of background:
Bought my mare in September from a place where she'd been a broodmare for the last 3 years. Apparently she had been 'lightly broken' in the home they bought her from - she is 6 so this would have supposedly been when she was 3.

Fast forward to now she has been rebacked in a sidepull but doesn't really like it (starts fussing with her head) with isn't 100% with seat/leg aids so does need guidance from reins.
She has been mouthed and walked about on the ground in a straight bar rubber snaffle and wasn't bothered but has quite a fleshy mouth so this wouldn't suit for proper riding.
Any ideas?
The idea is to use a bit to help get her used to leg aids (safely, have no brakes in sidepull as it stands right now!!) then consider transferring back to bitless.

I was thinking a french link of some sort, probably copper or sweet iron because she didn't seem to salivate much when mouthing. something nice and gentle though nathe/happy mouth probably wouldn't work because of how fleshy her mouth is.

May be a bit old school but what about a fulmer/full cheek snaffle with what ever mouthpiece you prefer.
 
either a fench link is good or else if she likes the bit you've been using what about a mullen mouth with full cheeks - it's thinner than the rubber snaffle but is a similar shape
 
Has anyone used lorenzini bits?
I have found one that looks perfect - full cheek w/ lozenge.
but to put it mildly its flipping expensive so need to see VERY positive reviews before buying.
 
My 4 year old is new to schooling and she is in a French link full cheek snaffle and goes well in it. She still lacks a lot of balance therefore having the full cheek makes her easier to steer.
 
I have the Lorenzini loose ring snaffle with lozenge. It's great! Super light weight, I'm sure it's warmer in winter plus it's hypo allergenic-my pony used to get a red mouth visible on the white side of face, doesn't any longer. I wouldn't put in cheap zinc earrings everyday so why use zinc in bits..?
