I currently ride my mare in a hanging cheek French link snaffle which is fine for Flatwork and hacking but when jumping it’s just not enough. She gets so excited and just runs through the bridle when jumping and I need something stronger, I don’t want to just shove something really harsh in her mouth so wondered if anyone has any recommendations on something that might help me have more brakes…

A waterford would help her "come back to you", but I know they can be pretty controversial. They can be pretty aggressive bits, so I don't know how you would feel about that. A kimberwick would be suitable, as you can put your reins on the smaller or larger leverage slot. A baby pelham with 2 reins is also a little bit more bit.

I would personally use a kimberwick, and swap back to the snaffle as needed. Lots of the time they need to step up to a bigger bit, then they can move back down :)
