Bitting help required please for a stroppy mare.

Ok sorry this may be a long one,
Teeth, back, saddle etc all been checked within the last 6 weeks. Teeth were checked yesterday after i thought it could be that absolutely fine.
My ISH mare is currently in a ported kimblewick (not using the hooks) for hacking, x-c, showjumping and any fast work. She hs gone beautifully in it for the past 6 months untill 2 weeks ago. She started getting her head really up in my face, so i popped on a martingale, she has developed to grab hold of the bit and use all her strength to just go.
Popped a grackle on her, this seamed to do the trick for a few days, now we're finding new ways to avoid contact by going backwards and sideways when we're told we're going to chill out and not dissapear with me. I tried her on hook of my kimblewick, she really hated it and just threw herself around, mini leaps in the air.
Same mare is schooled in a loose ring snaffle and plain caversson noseband, and is like a different horse.
She gets herself overly excited as she loves her job. This behaviour has only developed over the past 2 weeks, she's fed Calm and condition, sixteen plus conditioning, alfa a and extra flex. As shes a very poor dooer, shes out at grass with my 2 geldings for about 10 hours a day, in at night with a large hayledge net.
She's 17 and wont grow old gracefully.
She comes in from the field like a donkey, once your tacked up she's grown by about a foot and prances about. Makes my four year old look like a donkey.
So what should i try?

I haven't tried her in the KK one, but i have tried her in a NS Tranz. Is the KK much different?

Depending on how strong she is you could try hacking/jumping etc with her flatwork bit but with the grackle and martingale to give you a bit of extra control?
What other bits have you tried her in? I'm not a big fan of the fixed moutpiece in a kimblewick but some horses really like it...maybe something with a joint in would be better? Neu scheule do nice jointed pelhams.
I found a cheltenham gag absolutely fab in a really strong ex hunter I had, but obviously it's fairly severe and not a great bit for everyone...
Another thing I've found with mare is that they seem prone to loving a bit and then changing their mind a while later, the more expensive the bit the more they do it
