Bitting problems, any help appreciated!

I have a 5 yo ex-racer that i've had since September, he hadn't done any 'normal' ridden work before i got him and i re-backed him after a few years off in the field. He's been coming along really nicely but i'm now finding that with faster work he can be well very... strong!

I'm reluctant to change from a snaffle, but of course i'd rather something stronger in his mouth than have to haul on him to stop.

He isn't strong schooling or jumping in the school, but is strong out and about. The first canter will always be fine, but he gets gradually stronger until i actually can't really hold him! For example i took him on his first funride a month ago and he started off easy, but got stronger once he realised how much fun it was. He evades by sticking his ears up my nose, then once he gets running there is nothing in my hand and i really have to heave to slow him up.

On the funride he was in a single jointed, sweet iron full cheek, and was strong. Since then i've put him in a borrowed KK sprenger correction bit but again once he gets running there's no stopping him. He schools nicely and so long as i can keep him with me he's okay it's just once he gets going he seems to forget about me!
