I have just seen this "and for those who will say that he’s torturing his horse’s mouth, he’s riding in filet and he knows better than hurting one of his best horses!!!"

so what does riding in filet mean ?
 
"Filet" is a normal bridle (also called "bridon"), "bride" is a double bridle.
So a filet is only used with one bit and is normally considered gentle.
Where have you seen this/in what context?
