Hopefully all will go well with my 3rd visit to my prospective new horse on Weds and I will decide to hand over a deposit, my question is whether there is some kind of official document that you should use to record the deposit? i.e something that seller and buyer sign that covers the fact that the deposit is subject to vetting, and that the deposit would also be returned if anything happened to the horse in the interim period?

Also, and I'm sure this has been asked a million times, what insurance companies would people recommend? I am thinking about NFU............but don't really know much about them.

I got seller to write out a receipt (basically piece of paper stating how much deposit I had paid, what balance was and the conditions that I would have money returned) I also got her to sign a pre typed receipt when the horse was handed over to me stating a breakdown of what I had paid for (transport, horse, deposit etc).
As for insurance many people on here and a couple irl have recommended NFU so I have gone with them. They were really helpful and I'm told they pay out without too much fuss unlike a few others that are advertised in certain horse mags.
