Can you add a point strap to a Stubben saddle?

I tried a Stubben and it was brill and my horse seemed to be a lot forward in it (and it felt like it was made for me too) BUT the thing shot forward onto her shoulders at the canter as my saddler said that the girth straps are set too far back for her conformation. He would normally add a point strap but he said that this particular saddle has a plastic tree (he showed me the tree point and it def wasn't the normal wood) so he wouldn't do it.

Is it possible to add point straps to plastic Stubben trees?

Everything you say indicates that the saddle is not suitable for your horse so I would look for something that fitted properly not that had to be clamped down with a point strap to keep it in place.
 
I would say dont do it I had a point strap on my ideal which saddler told me to use and it caused muscle damage to my horses back, I will never use a point strap again in my view if you need one the saddle does not fit.
 
I have to disagree with never using a point strap. I specialise in fitting natives and cobs and we use point straps a lot. However, the tree and panel need to be exactly right, and ALL you're doing is lining the girth straps up with a forward girth groove. If you have a tiny wiggle in the basic fit then using a point strap may not be the solution, the saddle may indeed be wrong.

Ponies with that forward girth groove, wide rear ribcage, no shoulder or no wither are almost certainly going to need a point strap but not instead of the right tree and panel. With your saddle only moving forwards in canter I'd be suspicious that the tree isn't quite right.
