Yet again, I'm asking for advice (since taking on this yard job, it's all I seem to do lol).

One of the horses needs a bit of encouragement to work into an outline/on the bit, and needs to develop the right muscles to help him.

Which would you guys recommend to ride/lunge him in - a Chambon (used to use one with my lad with success) a Lungie Bungie, or a DeGogue? And can you ride in any of them?

We've used a chambon and de Gogue with great success. Never used the LB but the only times I've see them used, the horse seems to "fix" up against them.

Cambon you can lunge in and ride in, no problem
De Gogue has 2 styles - the fixed one is for lunging in, the 2nd style, you rarely see these days, but it is used with 2 reins, one to the end of the de Gogue ropes, the other on the bit.

Any of these will work if the horse is ridden forward from the leg and into a consistent contact - they won't help if the rider has erratic/strong/inconsistent hand or leg as the horse is meant to be learning to go for himself, in self carriage.
 
chambon and degogue prety much the same, do the same thing. both very good. getting the horse to work long and low, building the right muscles. you can only ride in the degogue. The LB is also good but is easy for the horse to avoid i find. but that might just be with mine, i like how the horse can flex its head left and right without restrictions unlike side reins where they are fixed.
