deep menage or hardish ground

which would be better for jumping the jumping paddock is hardish but grassy but the menage is pretty deep in most places i am only jumping small and found today that my horse panicked when he hit the deep bits dont want to teach him bad habits and he jumps nicely in the jumping paddock i only jump him once a week
 
Thats a tough one - I wouldnt jump on hard field as the concussion could cause lameness, joint wear and tear and splints etc.

Can you rake or level the deeper parts in any way or just jump on the shallower parts?
 
If the jumping paddock is hard but not rutted and with a good grass cover then that would be better. The problem with artificial surfaces is that they can be very uneven i.e deep in one spot and firm in another
