Just wanted to pic your brains please!
I would like one with a nice big screen that is pretty tough (ive heard you can get waterproof ones!) and one that has a "quick press" button (Idiot talk here for instant picture) ie for jumping and action shots.

What sort of camera would you advise?

Panasonic Lumix TZ5 Its been voted best camera, we bought my son one and I cant stop using it to take pics of my horses as it has the most amazing clear pics with a big screen, not waterproof but Panasonic sell covers to protect from rain. Very quick photo snap time and mini movie on it too so can do short video.

I use a Fuji - have had 2 and they are fantastic for action shots as you have a sports mode - most new cameras do but you need one that has a good frame rate per second or you get the horse before the jump and one after - not so good. I can usually get 4-6 nice shots over the whole jump with my trusted Fuji.

Did buy a £300+ Sony SLR recently and it was crap in terms of speed per second, so it went back to shop and using my 5 year old trusted Fuj 401.

In terms of quality agin the Fuji is second to none - this is also the opinion of a work colleague who teaches night classes locally - and I have seen friends prints from other makes and not a comparison to Fuji.

I will second the fuji I use it too take action pics of my daughter jumping .Good camera with sports mode
 
I also have a Panasonic Lumix, but would actually recommend the Fuji. I am not sure of which model, but some googling would help you find a suitable model.
 
I'd go with the fuji too, I got a finepix 5700 for my birthday (very excited cus its my first digi camera) and its great, very easy to use, and quite tough!
