DIY raw feeding - dog not eating bones

I've just switched all 3 of mine over to raw but needing to DIY to keep it affordable. The girls are loving it and very happily munching anything put in front of them but Dobby isn't anywhere near as keen. He'll eat minces and eat organs chopped small enough but he's flat out refusing any bone ?‍♀️ even checken feet, which he scoffs down the dried treat versions of. I'm trying to not change too much at once for him so I've been chopping them up as small as I can but he's still refusing. He is very much a 'the PH in this soil is too high, I fear I may die' type dog in general and could be fussy over ribble but would eat but I'm paranoid about nutritional balance with it being DIY.

Any seasoned raw feeders got any top tips?

Could you try coating a chicken foot in something really irresistible like the water/bit of oil out of a tuna tin, just to get him to give it a go? Or if you've got something like a chicken thigh, just very lightly sear the meat bit for a few seconds (just enough so that the bone isn't affected) so it smells more enticing to him?

Mine used to love chomping on all the bony bits (carcasses, feet, necks etc) but doesn't digest bone very well anymore, so I just make sure he gets 'complete' minces with a high enough ground bone content in them - you could go down that route if Dobby doesn't adapt!

A lot of mixes ready made already contain bone. Sadly the Dog Food Company, my go to people, appear to have shut down. They were great for doing the whole animal minced up.
