If my horse wouldn't catch, he'd be out in a head collar, and when any new horses are added to the field I turn him out in a headcollar in case they start a Barney and we need to get them separated. Personally, I've found they learn to break the field safe ones, and I've had me horse snap a long list of nylon/cotton head dollars whilst getting stuck the only time he was turned out in a leather one... So personally I just turn him out in his regular head collar.

One mare who was a demon to catch we turned out in her headcollar with a short rope attached - was still a pest but much easier to catch.
 
Getting rid of my ponies is the hard bit but it I had one that was difficult to catch I would use a leather one. I do use one to hold the neck cover in place after a bath and before a show as the cover is long and the pony's neck is short so I am more worried about it falling over her face
 
Mine's usually easy to catch and comes to call, but I had to put a headcollar on her in the field because of a witch of a horse that would attack everything, horse or human, and we needed to grab ours quick and get them out before she noticed!
