As per title, have heard varying opinions on weather to chuck or not as I have some from last year, has deet, what do you think?

I still use it. Challenge is stopping it evaporating and remembering to close and lock all the bottles over winter. If kept air tight think it is fine. Deosect only keeps 24 hours after being made up. Most other sprays will store if kept airtight.

Google of "is deet stable?" suggests that it's a chemical that doesn't degrade as long as you keep the air out and will stay effective for years.

Use by or best before. I think a lot of items are absolutely fine to be used past the dates that are on them. Smell it does it still smell as it did before?

I'd never heard of this and bought large bottles of flyspray that I've used over a year or two and one at least definitely had Deet in.
