To be clear he’s rejecting food he’s decided he doesn’t like, not rejecting food- he’s still eating plenty!

In this case I'm not understanding the issue really. I think you may be overthinking it. He won't starve through leaving the odd feed or eating more some days than others. If he is just a bit intermittent in wanting to eat his hard feed, I wouldn't stress about it. I would give him a base ration of some high energy cubes or a balancer and add other bits and bobs for extra palatability/energy if needed, or not, depending on his appetite. The vast array of mixes and feeds on the market is a marketing ploy for owners, not the horses.
