Dressage saddle advice

I wrote a long piece giving history but broke it down to this instead happy to add background if needed.

I would like to purchase a dressage saddle for my rising 5 year old WB as his current GP is not quite right but has been professional fitted and not causing pain. He is only 15.3 at the moment but growing he is a bit of a tank width wise but short back 6.3 rug 17 inch saddle, medium wither but quite flat backed. I was content to look at the fairfax (I say content my credit card was) as when I popped this on him (changed the gullet) he went beautifully but after looking at various others I am now confused over what would be better for us. A twist, high cantle and pommel allowing me to sit deep or a lower cantle allowing me to move and use my lower back more efficiently. Some of the saddles now look so deep that you are 'held' in plus I want to ensure there is even pressure over his back.

I have been riding in my GP's and switching back to my dressage made me realise how it chances my position. I now a lot is personal preference but some more knowledge of twists, high and low cantle and how they work is greatly appreciated
