CIC is one day international events. It also runs in Dressage, SJ, XC order
CCI is 3 day international events. It runs Dressage, XC, SJ and SJ is normally in reverse order.

Having said that CIC is one day it can also run over 3 days but will always be in the above order.

CIC's have a shorter XC and usually slightly higher SJ than the equivalent starred CCI.

For example - CIC* XC would be around the length of a longish Novice (ie. 5-6 mins) with show jumping up to 1.20. CCI* would have XC between 7-9 mins with show jumping only up to 1.15.
