Fast thoroughbred? help!

I have a 15.1 tb chestnut mare , shes 15 and ive had her about 2 and a half years. She was a broodmare until she was 11 and from what ive gathered, she hadnt done much previous to that. Shes been plagued with problems and trusting issues and after quite a long time shes now really come into herself and is lovely. The problem ive had since having her is that she constantly leans on the bit and in 3 years ive never got her into the position where i feel comfortable and confident with her. Ive tried different bits, tried different ways of riding but nothing seems to be working. At the moment shes extremely excitable and after being lunged and ridden shes still on edge. i know its probably the spring grass and eventually she will calm down. Out of the bits ive tried ive used a waterford snaffe, loose ring snaffle, 3 ring gag, jointed pelham ( i have breaks but it winds her up even more ), and a fulmer. I also do have a little disability if you can call it that with my left knee meaning that bending left proves a little tricky with her falling in. She can also be quite unusual when i put leg on, she can either be extremely sensitive or completely dead! I have done sj with her but its always at a very fast speed, she can clear them thats no problem but i would like to just calm her down and collect her up a little, mainly to get a decent stride!!
There is nothing physically wrong with her from what i can tell, her teeth and feet are fine and ive had all the muscles loosened up
Im just wondering if anybody had any thoughts for what i could try? She's a lovely natured horse but just very quick and it can get stupid!

currently shes on alfa a oil, cool mix and alfa beet. The fizziness of her is temporary and with some work i can solve that ( hopefully :) ) its the constant rush thats getting me.. :/
 
Loads and loads and loads of transitions? As in, try for 100+ in one schooling session, so she never gets a chance to get fast, as she's always got to anticipate what you might ask her to do next.

I'm actually quite boring about transitions, i think that they can solve a lot of problems!
 
Im going to give her a ride tomorrow so i will have a go with her, i noticed when she does do transitions she goes from leaning outline to pointing her nose out.. shall i just ignore it and keep going with the transitions??

What about trying a Dr Cook? Take away the bit completely.....

And I notice you tried her in a jointed pelham... have you tried a mullen or ported straight bar, as jointed bits with curb reins don't tend to work that well? I tried my ex P2P boy in one of these (mullen) and it worked - when he ran through the top rein, I gently introduced the bottom one and he virtually ground to a halt... Then stamped his foot in temper because he couldn't run any more! I don't use my pelham now because I couldn't be faffed with two reins and I don't like roundings, I feel that they negate the purpose of the pelham, but that's just my personal opinion, each to their own and I don't judge! (before you all jump on me!)
 
That may be an idea. i have tried a hackamore before but it send us everywhere and she ran through it. Shes so hard to figure out.. When i tried the pelham she was trotting along and actually stamping on the floor, that then gave me the nod to take her out of it haha. I havent tried the others you have mentioned. Will have to look into trying them. something will work, it will just take some time.
She will go nice in something for one time then the next time shes figured a way of evading it. Shes too clever this one!
