Feeding a Fizzy OTTB mare?

We recently aquired a very underweight 12 year old TB mare who at one time had been on the track. We have been feeding her up a bit over the past couple of months with a mix (containing very few oats), sugar beet and hay. She is becoming stronger through her work (light dressage, hacking) and gradually putting on weight - but becoming increasingly 'fizzy' and not concentrating in the arena. What advice does anyone have regarding feed/supplements?
 
I never found oats to make horses fizzy, more likely to be the sugar content of the beet and mix. I feed mine Fast Fibre with oats, linseed and magnesium ( he's so laid back he's horizontal! ) so high fibre all the way, no molasses and low starch
 
My Tb gets hifi lite, pony nuts and a balancer. Plus hay/haylage. He's so laidback he is horizontal but with plenty of energy for work.
Fast fibre alone didn't work with mine, he dropped off. Never tried oats, heard that they need to be balanced with either alfalfa or sugar beet.
 
Mollichaff calmer and sugar beet. The mollichaff has vit e and magnesium and selenium which works like a calmer.

It worked on my TB 4yo off the track and she could buck and fly leap.
 
My ex racer is fed speedibeet (5% sugar compared to 20% sugar in sugar beet), chaff, high fibre cubes, linseed and dash of veg oil - she's mega chilled out considering her last race was Oct and is only 4 :D
