fittening...advice (again!) please!

I've had Vogue at home for a few weeks now, and though not skinny I think that she's 'lean' and could carry a little more weight over her bum etc....she doesn't look underweight, just underdeveloped, or 'scrawny' even.

This morning my farrier said she's put weight on since I got her and feeding-wise she's doing well, however it's lack of muscle making her look the way she does. She was out of work a long time before I got her, and I haven't been riding her too often, nor consistently, and never for long. Also I must admit that in order to let her 'chill' I've been letting her pootle along, though with effort on my part I can get her working nicely and not steaming ahead nose first.

I've made a conscious decision to put the effort in on my part, but I have no idea where to start. I'd want to keep it as varied for her as possible, I suppose a good start would be just 'riding' her out, rather than perching on top and letting her poddle....but could anyone suggest some sort of regime? And detail it on the grounds that I'm pretty much a moron when it comes to stuff like this! My old horse was always kept 'ticking over' so I just gradually increased/decreased her workload to suit what we were doing/had planned in the coming weeks.

She lunges, longreins and hacks out well (just don't suggest hill work as we're flat as a pancake here!) and will work in the school but loses focus/interest after 15/20 minutes and starts to get silly.
