I have a sharer for my 20yo boy.
He is truly wonderful. Really chilled, proper schoolmaster - ex event horse whos hocks got him but he still happily jumps up to 3 foot.
I have a sharer as Im super busy with work and my other horse. To be honest, without competing him and not having any goals I wasnt motivated to ride him much especially as Im so busy.
I have a WONDERFUL sharer. She loves taking him for long slow hacks, giving him lots of love and has lessons on him to improve herself whilst he generally plods along like a school horse. Ive since changed jobs and her help means I can work shifts - Id be buggered otherwise!
I let her ride him whenever she likes and do whatever she wants. As an ex freelance rider, thats the line I think. They pay if they can do (within reason) what they like. If you're giving them particular instructions that you want them to do xyz and work on abc then you need to pay.
