Getting Fit After Winter

Hi all
Thanks for reading my post.
Just wondering if anyone could give me some advise on training up my 19 year cob mare after the winter.
The goal by summer is walk trot canter round the school and pop the odd small jumps in the fields.
I want to take time with her being a bit older and understand she needs to be fit and well warmed up.
Would it be best to start lunging? or maybe 20 mins in the school at walk building up to trot? if anyone has any advise it would be greatly appreciated.
Oh i am only able to train her at the wekends at the moment until the evenings start to get lighter.

I have a 25 year old ex event horse and I find the best way to keep him fit by taking him on 20 min rides 6 days a week, once he starts to get stronger taking him in the school for 10-15mins and doing serpentines and small circles helps keeping him supple
