So here's the strange thing, for some reason, the previous owners of our property saw fit to put all the gateways in the muddiest parts of the field.... and so I thought rather than move the gateways, Id stick in some grass mats. I've no experience whatsoever, of these mats except in other peoples homes, so are they all the same or are there differences and what should I watch out for.

Shame you’re in Cheshire as I’ve some left over from a pallet I ordered!

Mudcontrol have a FB page where people can share a pallet as the delivery costs are high

Whilst mud control mats are definitley the option to go for if you can afford it, I put grass mats down in my gateways last year and it made such a difference.
There was mud on top of them yes, but at least it was solid under foot/hoof and much less mud than the surrounding areas. I bought the fieldguard ones just because they happened to be local, I'm not sure how they compare to other ones but they held up fine, 1 got torn/damaged in a particularly high traffic area but nothing major.

I spent quite a bit paying contractors to put hardcore down a few years ago. Waste of money so now have Mudcontrol mats which are brilliant and well worth the money (am on clay)
