Grrrrr!!!! (long and a bit boring)

I put a post on here ages ago re bits. I have tried to understand what they do and the effects they have depending on their design but I remain at a loss - and quite peeved that I seem to be the only one who doesn't have a clue!

I got a few lectures on here last time about the fact I should know what they are but I don't - honestly I am trying. For example here's what I found on wikipedia:

Leverage bits:

* Curb bit: A bit that uses a type of lever called a shank that puts pressure not only on the mouth, but also on the poll and chin groove.
* Pelham bit: A single curb bit with two sets of reins attached to rings at the mouthpiece and end of the shank. Partly combines snaffle and curb pressure.

My response: WTF!?! By the time I remember what one is I have forgotten it again. What's the trick? Can anyone explain this to me?

I am sure I have the wrong bit on my TB and I am about to get one for my 4yr NF. I don't know where to start.
 
I have an 'egg butt snaffle' so I have been told (sorry again for ignorance). Its a constant tug of war with her when she decides to up the pace. I have absolutely no control when she starts rushing about.
 
a curb is a family of bits - lots of different types of bit fall into the general "family" of curbs. They are used to bring the horse's head in and down through pressure on the curb groove (with the curb chain) and poll (through leverage of the long arm of the bit).

a pelham is a type of curb bit - invented by a man called Pelham who tried to combine the snaffle bit and curb bit of a double bridle into one (takes up less space in the horse's mouth than 2 bits and is meant to have the same action)

It has an extra ring on the side which mimics the effect of the snaffle bit, and a small loose ring on the end of the long shank which works as a curb

With a young horse, I always start with a simple single jointed snaffle - usually one with cheek pieces to aid with steering.

There's just so much to know! I need to sort something out for my NF. I have just started to ride him (been backed, turned away now back into work). I will try and work out from this what I need. Thanks again.
