My new share horse has a wintec bates synthetic saddle. It is too narrow (quite alot too narrow) and is rising up at the front, he is very fat from being off work but I do not want to cause him pain or discomfort by using this saddle on him until he looses weight.

He has the yellow one in (narrow) and im not sure which one to buy :/ i dont want to spend too much money on lots if i dont need them

The only way you are going to find one that fits is to try them I'm afraid!
I put the gullet plate on the wither independantly of the saddle to determine whether or not it will fit, then I put it in the saddle and try again to see if it needs flocking etc.
I have altered plates that are on a "in between" sizes horse, this can be done with care as the plate is only mild steel.
I suggest you ask around to see if any of your mates have spare plates to try on your horse and if you are lucky you will find one that fits, then you can go and buy one. You are right not to ride until you do get one as you will do your horse some damage. Hope you find one that fits soon!
Oz :)
