Handling weight problems

I have just bought a new horse and at the moment he is a very healthy weight and looks great, but I have recently found some photos and videos of him back in the summer and he is quite over weight in them. I know that in the summer they are out on the rich grass and they can put on a lot of weight but is there any way you can keep their weight under control? :)
 
I would get a weigh tape and use it very week so if he does start to put on weight you can make changes before it becomes a problem.

Muzzle 12 hours / day or stable during the day to limit access to good grass, feed soaked hay possibly cut with straw while in...

Generally no unnecessary calories and as much work as possible.
