Wow, thank you all so much for your input, you've made my week!
I had posted on another forum and had no replies 
so was feeling quite down hearted about the whole thing.
You've come up with things I would never have thought of, the transforming horsebox/ temporary stable is a fantastic idea, as is the 2 story box.
I have another favour to ask... are any of you based in the Coventry/ Warwickshire area (or be visiting with horse in box any time soon)? I need to do some physical user research, to see a horse load, the space they have, how you interact with the box and just take loads of photos and ask some (hopefully not stupid) questions.
