Help Fruit Cake not cooking!!

I know I should be in soapbox but there are only 44 viewing and there are 327 here.

Rich Fruit cake says 2 hrs Gas Mark 1 its been in for 2hrs 30 mins and still doesnt look brown enough thin knife into centre comes out looking sticky.
 
Just leave it in. Maybe your oven is not up to temperature, anyway if it looks like it might burn, put a sheet of greaseproof paper on the top - like a hat and cut a small hole in the middle of the paper to let the steam out. It will stop the cake getting too crisp on top.
 
Cover the top with grease-proof (or more if you already have....) to protect the top, don't be tempted to turn it up, in fact....I'd turn it down, I had this problem with my xmas cake once....and protecting the top from burning, and turning it down slightly, seemed to work, took quite a bit longer to cok though!

Thanks all this is the very first ever proper fruit cake I have made. I have a cookbook belonging to my mum her cake tin some of her ingredients and my Lucky Apron.

I have put a greaseproof paper top on it and I will leave it in a while longer. I do wonder if my thermostat is dodgy!

This is so important to me as I want to learn to make fruit cakes as hers used to be and August was for fruit cakes because July was Ginger Cake.

Just in case anyone puts their foot in it I cant ask my Mum I lost her on 9th July.
 
And if it's not cooked in the middle then heat it in the micro-wave and put custartd on it to make a pudding-cake... And try again with the fruit cake...

My Fruit cake is cooked!! Dont worry its not been on all night but due to seriously bad insomnia I am supposed to shut down PC early evening.

It is dangerously good mistakes made were :-

8 inch square tin instead of 8 inch round

Recipe said Soft margarine I used hard Butter its what I had

Recipe said 4 oz Cherries but OH hates cakes with cherries so I substituted with Chopped Dates,Chopped Apricots and a small amount of Mixed Candied Peel.

It also said 1 tbsp of Brandy but I put 2 in just because I could.

BUT my cake is stonkingly good Rich Moist and tastes just like Christmas.

So in my master plan of Ginger Cake in July and Fruit Cake in August I think September may well be Pastry.

Sorry again this is in New Lounge but yesterday PM was an emergency and at least I didnt dial 999.:)
 
Sounds delicious! Glad it cooked - the custard option was intended as a last resort!!

Who needs 999 in such situations when you have HHO?
 
What you need to do now is make another one, wrap it in foil and save it for Christmas. Take it out every couple of weeks, prick it with a fork and dribble in more brandy. It will be sensational!
 
Sounds like your mum's prowess with the cake baking has rubbed off!

She would be proud. Good luck with the pastry next month. Pastry Tip - keep everything cool, especially your hands.
