What is the perfect high paying career to do alongside horses/is flexible enough.

Second vote for IT/Tech Management (focus on cyber security and AI if you're starting/studying now), for the pay and the flexibility (I have the tech and flexibility to take calls and stay productive even in a stable). But as @KikiDee says, the flipside is that it can be stressful and you feel like you never switch off. So you need mental tools to manage that.IT Support - developer - cyber security. Most can be done remotely/flexible working.

Whats the route to training to be an accountant? Do you need an accountancy degree? I did modules at uni and quite enjoyed it,and have a related job atm.Currently working this out myself - and training to be an accountant with a view to work for myself eventually. Pay looks quite good and is reasonable. Should be able to work from home eventually but will need to gain experience first. Whilst I am doing my exams, I’m just about to start a part time job in a garden centre. Won’t be earning lots but it will be good work/life/study balance and it’s important to me I have enough time for the horses.
Depending on what modules you did you may be exempt from some exams. Contact ACCA as they’re one of the main governing bodies.
