Just proceed with other viewings.
Are the original folks first time horse buyers or inexperienced? If yes then they may being a bit cautious but if not I would say there is something going on behind the scenes that you don't know about. Whether that be another horse they also like or issues with their livery yard having space who knows what going on but I would be a bit skeptical about a third viewing without a vetting being arranged unless this third viewing to do something more specific with the horse that has not been covered in the first two viewings.
