Sorry haven't read through replies properly, but you already seem to have lots of good advice! Is there a particular reason you're staying away from starch?
A good conditioning mix/cube is often a good place to start, personally I like Bailey's no. 4. However like you I'm currently trying to keep starch levels low (he's barefoot at the moment and also windsucks) and I've just started him on Bailey's Outshine.. it's basically an energy dense (24MJ/KG) 'supplement' using oil and some protein (12.5%) for weight gain. It's helpful as you only have to feed a small amount, and unlike some other forms of oil based feeds, the Omega 3's and 6's have been balanced. You do still need to feed a balancer/vit supplement alongside.. but might be worth looking at?
Luckily mine is keeping condition fairly well at the moment! He's in a massive field with plenty of grass, and feed wise is getting a scoop Alfa Oil, Balancer and Outshine. When balancer runs out I'll be swapping to a broad spec vit/min supplement as he should be getting enough protein from the Alfa and the Outshine.
