If you was selling two horses for them.

I would be doing the ads
Sorting out viewings
Riding them when people come
Schooling them a few times a week
Helping the owner ride them

One is for sale for £3,500 one for £5000 what would you ask from that for your work???

Between 8- 10% of the eventual sales price sounds fair

Approx 10% of the sale price - without your input it is unlikely the owner would get nearly as much for them, so 10% would be very fair.

10% is standard......however if you work on the % basis then make sure you don't take on a horse for lower than 5K otherwise it's hardly worth your while.

In your instance I would ask for 15% which should cover your time and expense so long as you find a home for them quickly. I tend to only do this when I have buyers waiting, then I buy the horses and sell them direct from myself.

all the sale liveries i know are charged weekly, £150 to £200 per week that way you make money even if the horse doesn't sell.

If the horses are to be stabled in livery at yours throughout I would be charging sales/schooling livery to cover expenses whilst with you, etc. Whilst you are doing the advertising for them, they should be reimbursing you in full. A lot of 'professionals' can charge between 5 and 15% on top of this per sale, but this is entirely up to you, although depending on your experience I would say that on top of expenses being covered I would be asking for 5-10%.

Just be sure that you get everything in writing before you start. Selling horses sounds easy but can work out to being a lot more work than you average for and if you are putting in all this work, they technically owe you a fee for your time, not to mention advertising costs. If you are only getting a percentage of the selling price and nothing to reimburse you for time and costs then if you work out the costs afterwards, you could well be gaining nothing but possibly even losing money.

If everything is laid out in writing and witnessed by an outside party, stating that they will pay you a set fee as well as reimbursments for costs incurred you will hopefully be covered legally as well.
