How often do we have to do the hoofs
If you are referring to picking out hooves (the plural name for hoof) then every time they go out/come in from the field, ideally before riding or at least twice a day if on box rest. But I know many people who never pick out their horses feet and they never have problems. I also know of a horse who got maggots under his pads and his feet were religously picked out every day but the owner couldn't see under pads.

If you are talking about shoeing then at least every six weeks. There is nothing to be gained by leaving it longer, incorrect foot balance due to overgrown feet is a precursor to all sorts of lameness issues. Ideally every five weeks, especially if a horse has remedial shoeing.
