How to decide what classes for your Cob

Op I would do some local coloured and cob classes and see how you go, i dont think she could be shown county level as a traditional, and she is not really a maxi cob, I would stick with local for now although i think she would look better clipped out and hogged.

Chellebean you have a cob. Horse has been hogged and legs clipped but its started to grow back and would need doing again before a class. Horse is also coloured so could do coloured classes too.

OP some shows have a 'family horse' or 'riding club horse' (not 'riding horse') class and either of those would be good for your horse, as well as cob and coloured classes. For 'family horse' or 'riding club horse' you could leave hairy and plait if you prefer.
