How to you decide what footing is ok when out hacking?

The more you ride and get used to your horse the more you learn what suits.
My Highland mare often tries to step off trails and make her own path - on those we walked. We've had to turn back a couple times when we've run into thick brambles.
We walk over logging routes and I let her pick her path through and over the leftover branches and foliage.

If its wet muddy but not slippy I trot. If its slippy I walk. If its puddles on routes I know I'll trot or canter.
Hard ground with no give I walk and same with stony ground.
I know my mare and listen to her if she asks to go slower on a piece of ground.

My youngster I'm more cautious with and will build him up slowly as I get to know how footsure he is and get him used to different terrain.
