Prettiest mare, most handsome gelding, most fluorescent pair, best 6 legs, biggest heart (one for those not I'n show condition), highest score jumping, handy pony...... How's that?

What about a nice easy intro dressage test as a have a go? There might be some frustrated dressage divas out there! If you have a yard of adults they are often more popular than prettiest pony type classes.
Clear round jumping? Pick your height and each clear gets a rosette.
A mounted scavenger hunt or treasure hunt?
A pairs class?
A horse and hound class?
Handy Pony?
Fancy Dress?
A family horse/pony class? With at least two members of the family to ride, depending upon your yard maybe include a small jump or an obsticle like a gate to open or a tarp to walk over, or something similar.

Lucky dip dressage / handy pony.
Have a few obstacles or tasks set out an some poles on the floor. Can be drop a ball in a bucket, walk over a tarpaulin, catch a rubber duck from a tub of water with a kids fishing net, anything you like really. Mix this with some simple dressage moves.
Have each task written on a piece of paper and at the start of the class have each entrant pick a piece.
Pin these up in order of picking and that is the test. Have a generous time limit and score penalties for errors. You need a caller for the moves.

Jockey & groom- small clear round, one jumps the horse, then passes whip to groom who jumps on foot, then hands whip back, over every fence. And works whatever the level of entrants, just pair up the good jumpers with less active grooms & vice versa.

Relay races round clear round
Fun dressage to music, with points for matching music to routine, lyrics appropriate to horse or rider etc so its not just the comp riders who get a shot. With a place for funniest performance too.
