My cobs passport doesn't have his date of birth, it only says the year he was born, 2006.

That isn't unusual, particularly for older horses. If the horse wasn't passported by the breeder then the person completing the application may not have known the exact day of birth, but knew the year; or the age (therefore year of birth) was completely unknown and was estimated by a vet (or the applicant).

Pre-compulsory passports it used to be common that unless a horse had breed society papers or a Weatherbys passport (TBs) owners only knew the rough year of birth, based on what the last owner told them and/or what the vet thought was likely. After passing through a couple of owners I expect that most leisure horses ages were based on their teeth and guesswork!

In Ireland you rarely see the exact date the horse was born you only see the year of birth because they passports companies consider a horse a year older on the 1 of January

Mine doesn't have a DOB at all - it just says "unknown"! I do know his ownership history so I'm confident he's about 13, but if it wasn't for that I wouldn't have a clue. The passport wasn't issued until he was about three, when (I believe) he arrived from Ireland.
