...youngish horses that enjoy dressage but can't jump? Or are people just looking for allrounders at the moment?

I think there definitely is. When we were looking for Cappy were not interested in a jumper, although he actually has a fair pop in him. He was bought to be a dressage horse only. So I am sure there will be.
