Is this a good sign...

Lol, that picture did make me chuckle! Generally mouthing up is a good sign, shows he's relaxed in his jaw & accepting the bit. It is only a bad sign when there is excessive foaming at the mouth, as this suggests the horse is holding its head incorrectly & therefore pressing on its salivery glands! Well I think this is the theory, there was a really interesting article in the BD magazine last mouth, howevere whether I have understood/remembere it correctly is another question

Dressage people love the foam, as believe it is a sign of the horse working well.

However some horses do it more than others, I had a polo pony that used to slobber everywhere (definitely not from contact!!).

Bitting materials like copper and sweet iron and new fangled alloys can all make the slobber more.

That's quite interesting about the incorrect head carraige causing him to press onto his salivery glands. He's currently in a stainless steel single jointed eggbutt with just a plain cavesson noseband.
 
I think there is information about this on the Equine Studies Institute website - somewhere, you have to trawl round for it.
Excessive foaming isn't good, it says somewhere, as the salivary glands are being compressed and it is a sign of stress (if I remember correctly).
