AAARGH! I'm having a battle with my legs at the moment and its driving me crazy. Every time I go to put my leg on everything comes up ( heels, calves etc).

Are there any exercises / suggestions to help me lengthen my leg and keep it wrapped around my cobs rather than lifting up?

I would just do lots of work without stirrups and use your seat don't grip with your legs ! Maybe try lengthening your stirrups aswell to encourage your legs down .
