I expected her to be a pain as I haven't ridden in about a week due to weather.
I did lots of transitions and some lateral work, and she just generally worked really well,

She is horrendous in canter, falling in to the extent that she slips and then goes to trot. Tonight I got her working really well in canter on one rein, canter on the other rein was better then usual

Could you give me some advice as to how to make her 'stand up' she leans in, so much especially on one rein, cant remember which, its like motorbiking round, so she ends up having to stop to avoid falling over.

You want the canter to be more balanced with her hindquarters engaged. Lots of leg, mainly inside leg pushing her into a constant elastic contact down the outside rein to support her. Sit up straight and look up, think of containing the energy of the canter underneath you. If you feel the canter start to get a bit fast and unbalanced, make a transition to trot, find a comfortable rhythm again and balance yourselves up, then pop back into canter.
