Is it leather? Tagging @cremedemonthe as he has an awesome I go sheet on getting rid of mould on tack. If you can, store your saddle somewhere not too cold and damp.
Yes it is leather, and it's kept in my house so I hope it's not too damp 🤫, but... When I got it (second hand) I'm pretty sure it was kept at the back of a cupboard outside... So it probably was damp there,

Have you tried the vinegar option?
That, I found, was the most effective way of killing it off, it's just then how to get it out. Sometimes when it's deep rooted in, once you have killed it, it's very hard to remove. I used soapy water and then conditioned after to restore the hide. Hope that helps, Oz

The guy who fitted a saddle to my horse uses white spirits to remove sweat/mould with the caveat that leather conditioner is put on immediately afterwards.

Its brilliant.
