how thick are the bits you are using? i put my mare in a nice thick (because i thought they were kinder) french link snaffle and she hated it... i found that she goes much better in a thin bit. also yours may have a dry mouth so maybe a sweet iron bit may help and try not having the cavesson too tight so she can relax her jaw and have nothing to fight against....yours sounds very similar in type to my mare...good luck
